4 egg yolks
1/2 cup100 g granulated sugar
2 cups470 ml milk
2 cups470 ml whipping cream
1 teaspoon1 teaspoon Nielsen-Massey Pure Peppermint Extract

Beat egg yolks and sugar in medium bowl until pale and thickened.

Heat milk and whipping cream in medium saucepan on medium or less until bubbles form around edge of saucepan. Gradually whisk into egg yolk mixture. Return all to same saucepan. Heat and stir on medium for 5 to 10 minutes until thickened and mixture coats the back of a metal spoon. Pour into a large bowl.

Add peppermint flavoring (and any crushed candy canes, chocolate chips, etc.) now. Stir. Cover with plastic wrap. Chill for at least three hours. Pour into ice cream maker. Freeze according to manufacturer's instructions. Garnish with additional crushed peppermint candy if desired.

Makes 3 cups
