Vegan Chia Seed Pudding

This Vegan Chia Seed Pudding is the easiest breakfast you’ll ever prepare. As a make-ahead recipe, you simply place the ingredients in a jar, shake them up and let the jar sit overnight. Top your pudding with fresh fruit the next morning for a simple and light breakfast. The delicate floral notes in our Tahitian Pure Vanilla Extract pair especially well with fresh strawberries, blueberries and cherries.

Ingredients

  • 1/2 cup coconut milk
  • 1/2 cup almond milk
  • 1/4 cup chia seeds
  • 1 teaspoon Nielsen-Massey Tahitian Pure Vanilla Extract

  • 1 tablespoon honey or agave nectar (optional)
  • ¼ cup sliced strawberries (optional)
  • ¼ cup sliced blueberries (optional)
  • ¼ cup sliced cherries (optional)

Directions

Combine all ingredients in a glass jar. Cover the glass jar with a lid and shake vigorously to combine. Refrigerate for at least 6 hours or overnight. Top with fresh fruit before serving if desired.

Prepared pudding can be kept in the refrigerator for up to five days.
