Caramelized Pineapple Sauce

1 small pineapple, peeled with eyes and core removed, small dice
1/4 cup60 ml clarified butter
1/4 cup50 g firmly packed dark brown sugar
2 tablespoons2 tablespoons Nielsen-Massey Madagascar Bourbon Pure Vanilla Bean Paste

Combine the pineapple, butter, brown sugar and vanilla paste in a large sauté pan. Cook over medium heat for 5 to 8 minutes or until pineapple is tender and sugar is caramelized.

Makes approximately 8 to 10 three tablespoon servings.

Serve warm over Vanilla Ice Cream, use as a filling in our Vanilla Sugar Crepes, or use as a topping for your favorite dessert.

Note: You can use Pure Vanilla Bean Paste in place of Madagascar Bourbon Pure Vanilla Bean Paste to achieve a different, but still delicious, flavor profile. Simply use the same amount of the Pure Vanilla Bean Paste.
