1/2 cup100 g sugar
1/2 cup100 g firmly packed dark brown sugar
1 tablespoon1 tablespoon cinnamon
1/2 teaspoon1/2 teaspoon salt
1/4 teaspoon1/4 teaspoon ground cayenne pepper
1 egg white
1 tablespoon1 tablespoon Nielsen-Massey Tahitian Pure Vanilla Extract
1/4 teaspoon1/4 teaspoon Nielsen-Massey Pure Almond Extract
3 cups430 g all-natural whole almonds

Preheat oven to 250 degrees F120 degrees C. Line a large rimmed baking sheet with parchment paper; set aside. In a medium bowl, combine sugars, cinnamon, salt and cayenne pepper; set aside.

In a large bowl, whisk egg white until frothy, then whisk in vanilla and almond extracts. Add almonds and stir to coat. Then add sugar mixture and gently stir to coat.

Evenly spread almonds onto prepared sheet pan. Place in oven for about 65-75 minutes, gently stirring every 15 minutes. Cool completely and keep in an airtight container.

Yield 3 cups710 ml
