Pineapple and Cabbage Salad

Ingredients

  • 1 pineapple, peeled, cored and cubed
  • 1 grapefruit, peeled and segmented
  • 1 orange, peeled and segmented
  • 1/2 white cabbage, finely shredded
  • 1/2 cucumber, sliced unpeeled
  • 1 sweet red pepper, seeded and sliced
  • 1 cup diced cooked ham (turkey, chicken or shrimp could be used)
  • Grated rind of 1 orange
  • 4 tablespoons olive oil
  • 2 tablespoons wine vinegar
  • 2 tablespoons mayonnaise
  • 2 tablespoons heavy cream
  • 1 teaspoon to 2 teaspoons Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract

Directions

In a large salad bowl combine the fruit, vegetables, and ham. In a small bowl, mix grated orange rind, oil, vinegar, mayonnaise, cream, salt, sugar, and vanilla to taste. Pour the dressing over the salad and mix thoroughly. Adjust seasonings. Chill thoroughly before serving.
