How to Prep & Use a Baking Mold

What You’ll Need:

  • Pastry brush
  • Nonstick spray, room temperature butter or cornstarch
  • Specialty shaped pastry mold
  • Prepared cake or cookie batter
  • Icing spatula

Steps:

  1. Make sure all the details of your mold are clean and dry.Cleaning a baking mold with a towel.
  2. For metal molds, use a pastry brush to spread nonstick spray or butter into the details of the mold. For silicone molds, lightly dust the mold with cornstarch. Spreading butter on pastry mold to prevent baked goods from sticking
  3. Using a homemade pastry bag, fill molds almost to the top with batter. Ensure batter is spread evenly across the pan.Piping cookie batter into baking molds
  4. Clean away excess batter or trim the edges with an icing spatula. Gently tap the molds on the counter to release any air bubbles, then place in the oven and bake according to your recipe.
  5. Once baked, it is important to cool the cake/cookies before removing them from the pan. This will prevent the pastries from sticking to the mold.

Pro Tips

  • Stabilize your silicone: Use a metal baking sheet underneath silicone molds to increase stability. This also makes it easier to transport the molds in and out of the oven.
  • Removing baked goods: If your cakes or cookies have a hard time sliding out, carefully run a small butter knife along the edges of the baked good to loosen it before trying again.
  • Mold intricate cookies: Using a thicker batter like cookie dough? Roll a small ball of cookie dough between your fingertips and press it into the most detailed part of the mold. Insert more pieces of dough until the mold is slightly less than full. Freeze cookies in mold for ten minutes before baking.
