Brown Butter Banana & Pecan Waffles

Warm, golden waffles are a great way to kick off the weekend. Crisp on the outside and tender on the inside, these Brown Butter Waffles have a toasty, delightful, hazelnut-like flavor. Add flair to your waffles with sliced bananas and chopped pecans or get creative with different topping combinations.

Ingredients

Homemade Whipped Cream

  • 1 ½ cups whipping cream
  • 1 tablespoon granulated sugar

Brown Butter Waffles

  • 6 tablespoons unsalted butter, additional butter for topping
  • 1 3/4 cup all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons brown sugar
  • 2 eggs
  • 1 teaspoon Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract

  • 1 cup buttermilk
  • ½ cup pecans, chopped

Directions

Homemade Whipped Cream

Tip: Put a metal mixing bowl and whisk in the refrigerator for 15 minutes before whipping cream.

Once mixing bowl is chilled, use stand mixer or hand mixer to combine whipping cream and sugar, starting on low speed and gradually increasing speed to medium-high. Mix for 2-3 minutes until the mixture holds stiff peaks or resembles whipped cream. Place in the refrigerator until ready for use.

Brown Butter Waffles

Preheat your waffle maker.

Cut butter into evenly sized pieces.

In a small saucepan, melt butter over medium-high heat. Using your whisk, gently swirl butter around the pan to evenly melt.

Once the butter is melted completely, it will begin to foam. Turn heat down to medium and let it bubble for 2-3 minutes, whisking frequently until brown bits appear. As soon as the butter is toasty brown and smells nutty, remove from heat and transfer into a heat-proof bowl to cool. Set aside. Learn how to properly brown butter here.

In a large bowl, combine flour, baking powder, baking soda, salt and brown sugar. Whisk to combine.

In a medium bowl, whisk two eggs until the yolks and whites are blended. Click here to learn the best way to whisk.

In the medium bowl with the whisked eggs, add Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract, mashed bananas, buttermilk and browned butter; whisk to combine. Using a rubber spatula, gently fold the wet ingredients into the flour mixture until just combined. Fold in the pecan chips.

Coat waffle maker with nonstick cooking spray and add 1/2 cup of batter to the waffle maker. Cook until the waffle is slightly golden. Repeat this step with the remaining batter. Spray the waffle maker with more cooking spray as needed.

Garnish waffles with toppings of your choosing.

Each waffle maker’s manufacturer varies slightly. Adjust the amount of batter used for each waffle based on waffle manufacturer.
