Pre-heat the oven to 400 degrees F.
Add the onion, garlic and black beans to a food processor and pulse until the mixture has broken down. You can make it as chunky or smooth as you like.
Add the mixture to a bowl and stir in the egg, carrots, breadcrumbs, coffee extract, salt and pepper. Form two patties approximately 4 inches wide by 1 inch high. Spread the olive oil on a baking sheet lined with parchment and place the burgers on top. Bake for 15 minutes, flip and continue baking for an additional 10-15 minutes. You can also fry these in a cast iron pan.
