16 tablespoons16 tablespoons butter
2 cups400 g sugar, plus extra, divided
2 eggs, beaten
1 teaspoon1 teaspoon Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract
3 3/4 cups470 g all-purpose flour
2 teaspoons2 teaspoons baking powder
1/4 cup60 ml cream
1 egg white, slightly beaten

Preheat oven to 350 degrees F180 degrees C. Cream butter and gradually add 1 cup200 g sugar. Add eggs and continue to beat until light and fluffy. Beat in 1 cup200 g sugar. Add vanilla. Add flour, baking powder and cream; mix well and chill. Roll out quite thin on a lightly floured board and cut with 3 inches8 cm cookie cutters. Brush with egg white and sprinkle with sugar (or decorate with other colored sugar or cookie decorations). Bake about 8 minutes. Cookies may also be decorated after baking with colored icing.

Makes about 88 cookies
