Malagasy Donuts

Malagasy Donuts are a typical street food in Madagascar and are most similar to American doughnut holes. These treats have a delicious, sweet cakey texture inside and a crispy outside. Eat them plain or sprinkle with cinnamon or confectioners’ sugar.

In a deep-fat fryer or large saucepan, heat vegetable oil to 350°F. Whisk water, eggs and vanilla extract together in a medium bowl; set aside. In a separate bowl, mix together the flour, sugar and baking powder.

Gradually add the dry ingredients to the wet mixture a little at a time. Stir the ingredients together until just mixed using a rubber or silicone scraper.

Use a greased 1 tablespoon measure or ice cream scoop to add the dough to the hot oil. Fry for a total of 3 minutes, turning every 30 seconds or so to allow for even browning.

When the dough is golden brown, transfer to a plate lined with paper towels. Serve hot or at room temperature.

Notes

If using a deep fat fryer, check manufacturer’s instructions for the amount of oil needed to safely fry.
