Pressure Cooker Mexican Chocolate Three Bean Chili

Ingredients

  • 1 tablespoon olive oil
  • 1/2 small white onion, chopped
  • 2 small garlic cloves, minced
  • 1 (4 ounce) can green chilies
  • 1 (15 ounce) can red kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can garbanzo beans, drained and rinsed
  • 1 (14.5 ounce) can fire roasted diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 2 tablespoons Nielsen-Massey Pure Chocolate Extract

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • freshly cracked black pepper

Directions

For an electronic pressure cooker, select the sauté mode (or high heat for stovetop pressure cookers). Heat the olive oil. Once hot and the onions and sauté until translucent, stirring frequently. Add the garlic and sauté until fragrant, about 1 minute.

Add the remaining ingredients and secure the lid making sure the valve is sealed. For electronic pressure cookers, set on high pressure (or over high heat for stovetop pressure cookers) for 15 minutes. Allow the steam to release manually according to manufacturer’s instructions.

Divide into four bowls and garnish with toppings of choice.
