Rose Water and Roasted Strawberry Rhubarb Margaritas

Fresh strawberries and rhubarb are roasted in orange juice and maple syrup, then blended with ice and tequila. The addition of Nielsen-Massey Rose Water brings the whole drink to the next level.

Ingredients

  • 1 pint fresh strawberries, stems removed and chopped
  • 5 stalks of rhubarb, greens removed and cut into 1-inch pieces
  • Juice from 1/2 an orange
  • 2 tablespoons maple syrup
  • 1/2 cup silver tequila
  • 4 cups of ice
  • 1/2 teaspoon Nielsen-Massey Rose Water

Directions

Preheat the oven to 350˚F. Line a medium baking sheet with parchment paper.

Add the cut fruit along with the maple syrup and orange juice to the prepared baking sheet. Toss together to evenly coat.

Roast for 40 minutes. Let cool completely on the pan.

Transfer fruit, ice, tequila and rose water to a blender. Blend until ice is finely chopped.

Serve in glasses rimmed with salt. Garnish with a lime slice and strawberry.
