Preheat the oven to 350˚F. Line a medium baking sheet with parchment paper.
Add the cut fruit along with the maple syrup and orange juice to the prepared baking sheet. Toss together to evenly coat.
Roast for 40 minutes. Let cool completely on the pan.
Transfer fruit, ice, tequila and rose water to a blender. Blend until ice is finely chopped.
Serve in glasses rimmed with salt. Garnish with a lime slice and strawberry.
