Five Cold Treats for Hot Summer Days

Late August days bring back sweet childhood memories of catching fireflies in Mason jars and eating hot dogs and potato chips with friends down by the lake. Whatever your summer memories are, here are five fun recipes to help you stay cool while bringing back the nostalgia of those steamy summer days.

#1. Frozen S’mores

There are few things more quintessentially summer than a campfire and s’mores. But, if the thought of sweating it out in front of the fire for some ooey, gooey goodness doesn’t appeal to you, this cold version of a hot classic is the way to go. The seeds from our Madagascar Bourbon Vanilla Bean elevate these marshmallows, and if you’re in a pinch for time, swap out store-bought graham crackers for the homemade version we offer here.

#2. Italian Orange Blossom Water Gelato

You say to-may-to, I say to-mah-to. You say ice cream, I say gelato. No matter your preference, these cool concoctions are the best way to end a sticky summer day. The Orange Blossom Water brings a fresh, citrus and floral note to this gelato, and the crushed amaretti cookies will have you daydreaming of summers on the Amalfi Coast.

#3. Watermelon Frosé

The “it” drink right now brings together everyone’s favorite seasonal fruit (watermelon) and the most popular summer beverage (rosé) for a clever take on a cool cocktail: watermelon frosé. The Rose Water Extract and Pure Lemon Extract add unexpected layers of flavor to the drink with a fresh, citrus taste. (Pro tip: You may want to double this recipe because as soon as your friends try it, they’ll come back to the bar for seconds… and maybe thirds!)

#4. Vanilla Bean Cream Soda Floats

If you’re looking for a fun alternative to an ice cream sundae party this summer, ice cream floats are where it’s at. The fizzy floats will bring back memories of summer days gone by, and bonus: the drink only takes about 15 minutes to pull together. Don’t try to skimp on this one – it’s worth it to make your own syrup with the Madagascar Bourbon Vanilla Beans. Imitation cream soda can taste cloyingly sweet. Make the cream soda syrup in advance if you’re planning to serve it for a crowd.

#5. Strawberry Ice Cream Sandwiches

Strawberries scream summer and, if you love them as much as we do, you’ll want to try these sweet sandwiches. You can make the ice cream ahead of time or, if you don’t have an ice cream maker, just slice up some fresh berries and add them to softened vanilla ice cream. You might want to double up on the chocolate sandwich recipe – the combination of Pure Chocolate Extract, cardamom and molasses is rich enough that they stand alone as a dessert cookie too! Don’t forget a nice cold glass of milk to wash it all down.
