Preheat waffle iron.
In a small bowl combine flour and cocoa powder together. Set aside.
In a mixing bowl cream butter and sugar together. Add eggs, one at a time, mixing in well. Beat in vanilla bean paste and chocolate extract.
Slowly mix dry ingredients in to the wet ingredients. Stir in chocolate chips.
Lightly grease the waffle iron. Spoon a spoonful of batter onto each quadrant of the waffle iron (four cookies at a time). Cook for 3-4 minutes (This could be more or less depending on your waffle iron. I’d recommend trying just one cookie first to get cook time right!) Remove each cookie with a fork and set aside to cool.

Spread frosting over cooled cookies.
