Cinnamon Popovers with Maple-Vanilla Butter

Ingredients

Maple-Vanilla Butter

Directions

Preheat oven to 425 degrees F for a light colored pan or 400 degrees F for a dark colored pan and position rack on lower shelf. Have all ingredients at room temperature before starting.

Grease two popover pans with melted butter, including area around the cups; reserve remaining butter. Heat pans for 15 minutes.

In a large bowl, whisk together flour, cinnamon, salt and vanilla powder. In another bowl, whisk the eggs, milk and remaining butter. Once well combined, whisk the wet ingredients into the flour mixture. Some lumps will remain and batter will be thin.

Fill the popover cups 1/2 full. Add water to any empty cups to prevent the pan from overheating. Place first pan in hot oven and bake for 15 minutes. Without opening the door, reduce heat to 350 degrees F and continue to bake for 30 minutes. Then remove popovers from the pan onto a cookie sheet and pierce their bottoms with a sharp knife to release steam. Turn oven off and place popovers back into oven for 5 more minutes. Repeat with second popover pan. Serve with Maple-Vanilla Butter.
