Line a square baking pan with parchment paper and lightly oil the parchment.
In a small microwave-safe bowl, add tahini and honey or brown rice syrup. Microwave for 30 seconds to melt and stir to combine. Stir in the vanilla extract.
Add cereal to a large mixing bowl. Pour the tahini-honey mixture over the cereal, add salt, and mix until evenly coated. Once the mixture has cooled slightly, stir in the chocolate chips.
Press the coated cereal into the prepared pan. Refrigerate for 3-4 hours until firm.
Slice into bars and enjoy! Keep leftovers in the fridge in an airtight container for up to a week.
