Preheat oven to 325°F. Line a baking sheet with parchment paper.
In a medium microwaveable bowl, microwave butter or coconut oil covered for 15 seconds adding 5 second increments if needed, until fully melted.
Stir in honey, vanilla extract, cinnamon, and cayenne pepper, if using.
Stir in the sunflower seeds, toss until well-coated.
Spread seeds out onto the prepared baking sheet with a spatula.
Bake for 10 to 12 minutes, until golden brown. Stir seeds halfway through baking time.
Take out of the oven and sprinkle with sea salt.
Cool completely on the baking sheet, break apart if necessary.
